Arbi ke Patte also known by various names as Colocasia Leaves or Taro Root leaves or elephant ears leaves, Patra in Gujarati, Alu Vadi in Marathi or Pathrode or Patrode leaves in South India. This is a quick and healthy recipe where the steamed Vadis (Patras)are spiced by sautéing in spices instead of deep frying them. Traditionally the leaves are stuffed with chickpea batter but this recipe uses protein rich lentils to make the batter. which makes it a protein packed and tasty snack / appetizer / side dish / an accompaniment or a side dish. It has a beautiful texture and taste. Alu Wadi also known as Patra is stuffed rolled Colocasia leaves crispy Indian snack-appetizer that is popular in both Maharashtrian and Gujarati cuisine.

Apart from the taste Colocasia leaves are also high in vitamins and antioxidants. They are good for boosting your immunity and eye health. It has Calcium, Iron, Vitamin C, Vitamin A and B, Dietary fibers, saturated fats, Proteins and no carbs.
They make a healthy protein packed side dish or snack that we all can love.
The rolls can be steamed ahead of time and simply pan fried when ready to be served.
The steamed rolls as well as pan fried Vadis can be frozen.
These are favorite with the kids especially steamed ones and can be given to toddlers too.
